So prior to Christmas, using the 25th would be very dangerous, since Don of the Deadbrains would get handed back the levers of power at a time he would be in a craptacularly vengeful mood. But now, Congress could just run out the clock with Pence as Acting Prez until Biden is inaugurated.
Or course, finding a majority of Cabinet to go along with that might be difficult. That's Pompeo (State), Munchkin (Treasury), Miller, (Acting Defense, so maybe ineligible), Rosen (Acting Attorney General, so maybe ineligible), Bernhardt (Interior), Sonny Perdue (Agriculture), The Grinch Ross (Commerce), Scalia (Labor), Azar (Health and Human Services), Carson (Housing and Urban Development), Mrs McTurtle Chao (Transportation), Brouillette (Energy), DeVos (Education), Wilkie (Veteran's Affairs), and Wolf (Acting Homeland Security, so maybe ineligible)

Can Trump fire Pence?

Then, if within that four days, they send another letter saying the Barbecued Bloviator is still unfit, that starts a twenty-one day period for Congress to consider the matter, where 2/3 of both the House and Senate would have to vote to permanently remove him.
